SHAPE: Gyuto. Japan's answer to the chef's knife with a thinner profile. Gyuto translates to cow sword.
STEEL: ZDP189. This crazy powder steel is made by Hitachi. It contains 3% carbon and 20% chromium which is fairly unusual to say the least. As one might expect with these numbers the steel is capable of insane hardness. Obviously this comes at a price, both cost wise and sharpenability.
FINISH: Polished
HANDLE: Octagonal teak handle with a buffalo horn ferrule.
