Katsuobushi grater box - for shaving bonito flakes
Bonito flakes of dried skipjack tuna are a staple in Japanese cooking, whether sprinkled on top of dishes or used to make up batches of dashi. As the dried katsuobushi are more readily available, if you are keen on Japanese cooking from scratch, it makes sense to have a grater box to hand.
Saunders says:
"Dashi, that distinctively Japanese stock that is packed full of umami, is used in pretty much every Japanese dish. While it might seem like a fair bit of faff, making your own is actually well worth the effort, like the difference between lovingly simmered bone broth and a single solitary oxo cube. Having the grater also means you are free to sprinkle bonito flakes on everything you cook"
