Sakai Takayuki have a long and distinguished history of producing truly excellent knives using expertise that has been passed down generations. 

These knives are from Sakai Takayuki are from their top line Homura series. They are forged by Itsuo Doi a top rate blacksmith from Sakai and then sharpened by the Yamatsuka family, the resident master sharpeners at Sakai Takayuki.

SHAPE: Kengata Santoku. Named after the three best things to do with this knife - slicing, dicing and mincing. It is the classic veg prep knife with both good breadth and width. Unlike a regular santoku, this version has a drop tip.

STEEL: Aogami (blue paper) 2 steel. This is very similar to white paper steel but with tungsten and chromium added to it which helps with edge retention and slows down rusting. The steel has then been hardened to 62-63 rockwell and wrapped in stainless steel to further ease maintenance. 

FINISH: Polished

HANDLE: Octagonal ebony handle with a buffalo horn ferrule.
